When=A0carving I always held the wood piece in one hand and the knife and rarely the chisel, in the other. It did the trick for me :O)

In my 30 years of basswood carving, I've never user a vise for mallet and
chisel. I've used a bench which I sit on one end and place the head or
whatever against a half circle cut board nailed in at the other end. This
gives you a stop and something that will hold the head against the mallet
and chisels whacks as well as let you carve with a pro knife while the other
hand holds the head from moving sideways. My bench is only 24" long and
very thick.
